Ingredients:
2 medium organic beets
1 tablespoon sea salt
4 cups filtered, chlorine-free water
Instructions:
Wash and peel the beets, then chop them into small cubes.
Place the beets in a clean quart-sized glass jar.
Dissolve the sea salt in the filtered water and pour over the beets, leaving about an inch of headspace.
Make sure the beets remain submerged beneath the brine. Use a fermentation weight if needed.
Cover with a fermentation lid or a loosely secured lid that allows gas to escape.
Leave at room temperature, away from direct sunlight, for approximately 3β7 days. Check daily for signs of fermentation.
Once pleasantly tangy, strain the liquid and refrigerate.
Enjoy a small glass on its own or add a splash to your favorite savory drinks!
A Little Fermentation Tip: Fermentation time depends on room temperature. Discard the batch if you notice fuzzy mold, unusual colors, or a rotten smell. Always use clean equipment and keep the beets submerged.
Beet kvass is a wonderful reminder that some of the simplest traditional foods can be both nourishing and delicious!
